I have been busy with other things in life for the better part of this year. Looks like there have been very few (if any) updates to firmware, no product in stock, and only a post a month from ECC since May... Am I missing something? What's wrong with the first configuration (graph) you showed?
Looks like your mash ramped steadily and hit your setpoint. The RIM's tube oscillated but never appeared to get too hot (IMO), in fact not more than about 5f above your setpoint. What improvement are you looking for?

Bottom center of this picture you can see what I ended up doing with the wall wort.
It is a simple 2 wire receptacle zip tied to a DIN mount. Not what I was originally looking for but VERY simple.

Thanks for the great information. When I ran the test with simple water, the probe placement didn't seem to matter much. I will switch the placement of my probes on my next batch and see what happens. It makes sense. My thought was that I was heating based off of the temperature of the wort coming ...
