Welcome! One probe per keggle will suffice. If an output is going to be controlled by a PID, it must be associated with a temperature probe. DINs only work with processes, not Manual Mode. You could presumably setup a process that's sole purpose was to read a DIN and based on the value, assert the output. Kind of strange, but it would work. Like you said, just forcing the 5v onto the SSR control pin wouldn't be very good because the swit...

As you can see in np0x's pics above, cat5 (Ethernet) cable makes an excellent wire for the low voltage DC control lines to the SSRs. cat5 has 4 twisted pairs, so you can wire up 4 relays very easily, or more if you share grounds.
