Looks like you switched over to the Electronics Salon relay module. Is that the same PS you were originally using?

That is the Electronics Salon relay, but I think the other one was Electronics Salon too but the DIN version. I was going to go with DIN but decided better of it. It's a different PS. I was going to use the one from a disk drive enclosure but came by this smaller one that only does 12v.

I worked through some grounding issues with the help of JonW (thank you!) adding a connector block for grounding wires:
Here is a photo of the system almost in action. It's setup and running but without an active fermentation my garage is colder then the fermentation would be:
I am also amused that in the photo I can see the red and green colors in the temperature leds. Directly viewing them not so much.
