Temp probes are 1/4" MPT threads.

The compression fitting does give a water tight seal, so the probe can be immersed. But the wire going into the stainless steel portion of the probe is not water tight, and should not be submersed or wet. There is a small sleeve to help protect with occasional splashes.

So, if I am screwing the whole probe assembly into a coupling that I'm mounting on my kettle, I would need to weld on a 1/4" coupling? Something like this:

If so, I guess they must be measuring the opening in the adapter and not the outer thread dimensions, because it measures more like 1/2"...

thats a NPT fitting .. the probes are MPT there is a difference. why they say 1/4? I think its the I.D . but if you go into a HD and find the 1/4 MPT coupler it will fit the probe

EDIT I guess I was wrong.. learn something new every day.

I believe that fitting will work. From Wikipedia:

Anybody had any experience buying from http://www.buyfittingsonline.com ? I've got a bunch of fittings I want to get and those prices are pretty decent compared to mcmaster.

Any other places people would recommend?

They're fairly quick on shipping and are less expensive than Mcmaster Carr. Bargainfittings.com is a good place too.

The temperature probes ARE 1/4 mpt, i don't get the sizing either, but all my fittings are 1/2 mpt, and i just got a 1/4 -> 1/2 mpt adapter (i think the part is called a coupler, although the plumbing parts all have funny names if you ask me) and screwed it in, so i use 1/2 everywhere and put adapters into my 1/2 fittings where appropriate(read the temperature probes.)
