Type of sensors

I just bought my first of hopefully many BCS-462 and coming models. But there are some questions that is not clear to me. Like what type of sensors should I use? I've been looking on aliexpress and cant really make sense of what type of temperature sensor to purchase?

One website: http://www.brewershardware.com. No fuss and no issues. You can get the parts and build yourself or buy ready made.
