if you are worried, get 'direct burial' cat5 cable, and for a few bucks more, 'sheilded' will give superb results for temp sensors..

Yeah I am planning on doing individual runs of 22 AWG twisted pair for the sensors.

Wires for sensors & ball valves (also wiring style)
