I agree with JonW, I'd recommend doing a calibration.
bbrally, one of our forum users, created a great tool using the API to help you do the calibration:

Are you saying I need to calibrate the probe every few months?
Is it going to change again later? Can I anticipate when it will want a new efficiency number in the future?
Is it going to happen in the middle of a huge brewday?

Calibration is usually a one time process unless something changes.
Is there any possibility that the probe ever came in contact with the RIMS element? I'm wondering if an overheating situation caused the change.

No there is plenty of space between the rims element. I have never had an over heating experience.
I have a flow switch between the rims and the mash tun that will not allow the rims element to heat without flow.
It simply started giving me a different reading from one batch to the next.
I know I sound like a whiner, but I do appreciate the assistance.
